Ennai Kathrikaai Kuzhambu




Ingredients

1.Mustard seeds- 1/2 spoon
2.Oil - 2 spoons
3.Coconut paste - 3 spoons
4.Jeera - 1 1/2 spoon
5.Salt
6.Turmeric Powder
7.Brinjal (small) -10 Nos
8.Curry Leaves
9.Small onion - 8
10.Chilly Powder - 2 spoons
11.Asaefotida
12.Coriander Powder - 1 spoon
13.Fenugreek seeds -1 spoon
14.Tomato -1
15.Tamarind juice(thick) - 3 spoons
16.Jaggery
17.Garlic - 6 Cloves

Preparation
-----------
1.Heat the Pan and add Oil.
2.Add Mustard seeds,Curry leaves,Asafoetida and Jeeragam to the pan and fry for few minutes.
3.Cut the Cleaned Brinjal and divide it as 4 (Just divide do not cut it completely)and soak in salt water for 10 minutes.Later add little oil and turmeric powder to it and boil in oven.
4.Add Onion,Tomato,Garlic,Chilly Powder,Salt and Brinjal to the pan and fry for few minutes..
5.Add Tamarind juice to the pan and close the lid.
6.Add Coconut Paste.
7.Allow it to get cooked until the gravy becomes dry.
8.Add little Jaggery to the curry.
9.Delicious Ennai Kathrikaai Kuzhambu is ready.
