Crab Curry




Ingredients
-----------
1.Oil - 2 spoons
2.Coconut - 1
3.Sombu - 1 spoon
5.Salt
6.Turmeric Powder
7.Crab- 3/4 kg
8.Curry Leaves
9.Small onion - 250 gms
10.Chilly Powder - 2 spoons
11.Ginger Garlic Paste - 4 spoons
12.Tomato -2
13.Coriander Powder - 3 spoons
14.Patta(Big) - 2
15.Cloves - 6


Preparation
-----------
1.Heat the Pan and add Oil.
2.Add Patta,Cloves and Curry Leaves to the pan and fry for few minutes.
3.Grind 1 Tomato and half of the Onion and keep aside.
4.Chop the remaining tomato and onion and add to the pan.Later add the onion tomato paste to the pan.
5.Add Turmeric powder,Chilly Powder and Salt to the gravy.
6.Add Crab to the pan.
7.Grind Coconut and Sombu and add it to the pan and close the lid.Let it get cooked for 10 to 15 minutes.
8.Crab Curry is ready.
Note: If you want Crab Masala, Use 1/2 Coconut or Coconut milk accordingly.


Ennai Kathrikaai Kuzhambu




Ingredients

1.Mustard seeds- 1/2 spoon
2.Oil - 2 spoons
3.Coconut paste - 3 spoons
4.Jeera - 1 1/2 spoon
5.Salt
6.Turmeric Powder
7.Brinjal (small) -10 Nos
8.Curry Leaves
9.Small onion - 8
10.Chilly Powder - 2 spoons
11.Asaefotida
12.Coriander Powder - 1 spoon
13.Fenugreek seeds -1 spoon
14.Tomato -1
15.Tamarind juice(thick) - 3 spoons
16.Jaggery
17.Garlic - 6 Cloves

Preparation
-----------
1.Heat the Pan and add Oil.
2.Add Mustard seeds,Curry leaves,Asafoetida and Jeeragam to the pan and fry for few minutes.
3.Cut the Cleaned Brinjal and divide it as 4 (Just divide do not cut it completely)and soak in salt water for 10 minutes.Later add little oil and turmeric powder to it and boil in oven.
4.Add Onion,Tomato,Garlic,Chilly Powder,Salt and Brinjal to the pan and fry for few minutes..
5.Add Tamarind juice to the pan and close the lid.
6.Add Coconut Paste.
7.Allow it to get cooked until the gravy becomes dry.
8.Add little Jaggery to the curry.
9.Delicious Ennai Kathrikaai Kuzhambu is ready.

Kurma




Ingredients
-----------

1.Ginger Garlic Paste - 3 Spoons
2.Patta - 3
3.Kraambu - 4
4.Bay Leaf -1
5.Green Chilly - 4
6.Kasakasa - 1 spoon
7.Onion(Large) - 2
8.Tomato -3
9.Coriander powder - 2 spoons
10.Sombu - 2 spoons
11.Vegetable (Cauliflower/Potato/Soya Chunk or cooked Chicken)
12.Curry Leaves.
13.Onion(Small) - 2


Preparation
-----------
1.Heat the Pan and add Oil
2.Add  Ginger Garlic paste
3.Add Onion,Tomato and the the Vegetable to it and fry for few minutes.
4.Grind Coconut,Green Chilly,Sombu (1 spoon) and KasaKasa and add to the pan.
5.Add Coriander powder and salt.Close the lid and get it cooked.
6.Heat the pan and add Patta,Kraambu,Curry Leaves,Bay Leaf and chopped small onions.Add it to the curry for garnishing.

Drumstick Masala




Ingredients
-----------

1.Mustard seeds- 1/2 spoon
2.Oil - 2 spoons
3.Coconut - 1/2
4.Sombu - 1 spoon
5.Salt
6.Turmeric Powder
7.Drumstick - 3
8.Curry Leaves
9.Small onion - 6
10.Chilly Powder - 2 spoons
11. Urad dal(broken) - 1/2 spoon


Preparation
-----------
1.Heat the Pan and add Oil
2.Add Mustard seeds,Urad dal,Curry leaves and Drumstick to the pan and fry for few minutes.
3.Grind Coconut and sombu and add it to the pan.
4.Add Turmeric powder,Chilly Powder and Salt to the gravy and close the lid.
5.Allow it to get cooked until the gravy becomes dry.
6.Drumstick masala is ready.

Pulao




Ingredients
-----------

1.Ginger Garlic Paste - 4 Spoons
2.Coconut Milk - 2 Cups
3.Patta - 3
4.Kraambu - 5
5.Bay Leaf -1
6.Elaichi (Optional) - 2
7.Rice - 2 Cups
8.Green Chilly Paste - 4 Spoons
9.Ghee - 3 spoons
10.Oil - 2 spoons
12.Pudhina - 1 bunch
13.Coriander leaves - 1/4 bunch
14.Cashew Paste(Optional)


Preparation
-----------
1.Heat the Pressure Cooker with Ghee and Oil
2.Add  Ginger Garlic paste and Green Chilly Paste in the regular interval of 1 minute
3.Add Elaichi and Bay leaf to it.
4.Grind Patta & Kraambu as Powder and add to it.
5.Add Washed and chopped Pudina and coriander leaves.
6.Add Cashew paste to it.
7.Add Washed Rice and fry it for a minute.
8.For 2 cups of rice,Add 2 Cups of Water and 2 cups of coconut milk.
9.Add Salt and close the lid.Let it get cooked in pressure cooker like plain rice.Make sure its not over cooked.
10.Once it is done add little ghee and salt if required ,Mix it thoroughly without breaking the rice.You can garnish it with fried cashews.
11.One of my favourite dish is ready.
12.I like when it is served with Chicken Gravy and Onion Raita.


Poriyal






Ingredients
-----------
1.Vegetable(Any)
2.Red Chilly - 2
3.Mustard seeds- little
4.Curry Leaves
5.Urad dal - 1 spoon
6.Curry Leaves
7.Oil -1 Spoon
8.Salt
9.Coconut(grated) - little
10.Boiled Toor dal (optional)

Preparation
-----------
1.Wash and Cut the vegetables into small pieces
2.If you are using Snake Guard, Add the required salt and crush the vegetable and store it into the container, So that the quantity should get reduced.(This makes the vegetable softer when we eat).Dont add salt while cooking.
3.Heat the pan and add mustard seeds, urad dal,curry leaves, red chilly and wait until it get cooked.
4.Add the vegetable and little water to the container and close the lid.
5.Once the vegetable is cooked, add the toor dal and grated coconut to it.
6.Thats it!! Healthy side dish is ready!!

Potato Masala


Ingredients

1.Potato - 4 Nos
2.Saunf - 2 Spoons
3.Chilly Powder - 1 1/2 spoons
4.Garlic(big cloves) - 7 Nos
5.Turmeric Powder - little
6.Curry Leaves
7.Salt
8.Oil -2 Spoons

Preparation
-----------
1.Boil Potato and cut it into big pieces.
2.Heat oil in the pan and add curry leaves
3.Add Potato and fry it for few minutes.
4.Grind Garlic and Saunf for a second and add it to the potato.
5.Add Chilly powder,Turmeric Powder,salt and little water to it.
6.Serve with Curd Rice, Sambar Rice, Rasam Rice or with variety rice.
